I’ve loved barbecue for as long as I could remember.
We used to have a Lillie’s Q restaurant just down the street from the office and I ordered from there on such a regular basis, that they could recognize my voice on the phone.
I’ve always wanted to learn how to smoke meats but have been very hesitant. I never knew what it entailed and how complicated it was going to be.
I mentioned previously, that one of my neighbors is a world class barbecue-er.
I first tasted his barbecue at our last block party. He made some barbecue and brought it to the party. The food was delicious.
For the last couple of times, I’ve asked him to show me what he does when he barbecues.
The set up and all that goes into the barbecue process. He will start early in the morning and get all of the meat properly seasoned. Then he will get a plan in place as to what temperature he will cook the meat, when he will wrap it, and when he’ll finally take it off the fire.
This whole process will take sometimes 8 to 10 hours, start to finish. Once I saw how much effort it took, I felt informed and comfortable investing in an expensive smoker.
